A food reading collection · choose your own places and dates

Three tastes, three conversations.

A ladle of dalma, a Cuttack bowl, mustard around a piece of fish. Start with the meal that makes you curious, then listen for the person and the place behind it.

These dishes connect Bhubaneswar, Cuttack and the Puri coast in our reading collection. They are not a suggested one-day route or a fixed menu. Keep the ones you want to explore and arrange each meal separately.

01 · Dalma · Bhubaneswar

A ladleful, and a question.

Choose one vegetable to notice, then ask about the lentil and seasoning. The dalma story follows an everyday bowl into different preparations and the calendar of Kartika.

Before you go
Ask which vegetables and cooking fat are in today’s version, and what the cook enjoys serving with it.

02 · Dahibara Aloodum · Cuttack

Let the bowl change as you taste.

Try a little of the soft dahibara, then the potato and gravy, then bring them together. The Cuttack story invites a tasting game and a memory rather than a contest for the best vendor.

Before you go
Ask about a smaller serving, chilli, dairy and toppings before the bowl is assembled.

Fish pieces and long potato wedges in mustard-coloured gravy in a white bowl.
Machha Besara with potato · Kumarnihar, 2015. One documented preparation.

03 · Machha Besara · Puri coast

Follow the mustard.

Look beyond the golden gravy. The fish story asks where the fish came from and compares a bowl of larger pieces with a documented small-fish preparation.

Before you go
Ask the fish’s local name, how it is prepared and what bones to expect. Confirm availability for your day.

Turn the thread into your journey.

Make it yours

Save the three ideas, then remove any dish you do not want. Ask about the actual ingredients before choosing a meal; neither a photograph nor a dish name settles dietary requirements.

Give each meal its own place

Use the linked city guides to choose where a food pause fits. Confirm the kitchen, service time and price separately. No vendor, reservation or transfer is included.

Carry a small memory

Add the cook’s explanation, a taste you noticed or a question to your private journey notes. When exporting a book to share, use the control that excludes personal notes.

Save these 3 ideas together, then choose dates, add notes and remove anything that does not fit. Every idea begins unscheduled. New journeys carry the chapters connected to their selected ideas into the downloadable tour book; choose the illustrated book to include photographs. Your existing journeys stay as they are.
